Yummy fudge pie

This is so easy and sooooooo good!

Melt:
1 stick butter
2 squared unsweetened chocolate
Cool slightly

BeAt:
4 eggs

Beat into eggs:
3 tablespoons light corn syrup
1 1/2 cups sugar
1/4 tsp salt
1 tsp vanilla

Add chocolate mixture and mix well. Pour into unbanked pie shell. Bake at 340 for 25 or 30 minutes. Do not overbake, it should shake like custard.

Serve with sweetened whipping cream. Try just whipping your cream to a gravy consistency and then added 2 tbs sugar and a tsp vanilla. I love the soft creamy consistency versus a stiff whipped cream.

Fried okra salad

This is a recipe I got from Tori over at www.scoutsmithscoop.blogspot.com. Jennifer over at ranchgirl09.blogspot.com had a recipe swap and it was super fun. I still have two more to try and I can't wait!

1 package frozen breaded okra
1 bundle green onions
4 fresh tomatoes
2 avacados
Crisp bacon
1 bottle Catalina dressing

Fry okra and drain. Chop remaining ingredients. Add dressing just prior to serving.

Notes: I used fresh battered and fried okra with a buttermilk dredge coated in a flour and cornmeal mixture. I fried about 5 strips of bacon to crumble ad didn't even use 1/2 the bottle of dressing.
