Peanut Butter Balls

Make no mistake these are delicious and NOT low fat.

Peanut Butter Balls
1C Peanut Butter
1/2C Butter
2C Powder Sugar
1/2C Brown Sugar
1tsp Vanilla
1C Coconut
Chocolate chips

Optional:1C Oats
1/4C Honey

Mix peanut butter and butter (soften) Add brown sugar and powder sugar. Mix in vanilla. Add coconut and choco chips to your liking. Roll into balls and refrigerate to harden...or the freezer if you want to enjoy them even quicker.

If you want smoother pb balls add less oats. The oats make it more like an edible cookie dough.

I'm going to warn you, you will NOT be able to stop eating these once you start. This recipe came from one of my best friends growing up and still today. She made me a batch for my birthday last week. They were as good as I remembered. Thanks Monica!

I usually use the honey if my mixture is dry and I am having trouble getting it to stick together.

Yellow Country Cake

My childhood friend brought me this cake after having Ainlsee and boy it is good!

1 yellow cake mix
1 box vanilla pudding
1/2 cup sugar
3/4 cup oil
4 eggs
1 cup apricot nectar

Combine ingredients and bake in a bundt pan for 45 minutes at 325. I like to spray the pan and coat with sugar instread of flour for a little crunch.

Trust me, this simple cake WILL NOT disappoint. It is soo moist and the apricot nectar makes it so delicious it doesn't need a glaze or frosting or anything!
